Typical foods


Lazio's cuisine is of "poor" origin (cucina povera) but rich in flavor and is heavily based on pecorino romano cheese, guanciale (cured pork cheek) and seasonal vegetables.

The four great pasta dishes: Carbonara, Gricia, Amatriciana and Cacio e Pepe.

Porchetta: Spicy, fatty and moist boneless pork roast, heavily salted and stuffed with garlic and herbs (famous in Ariccia).

Carciofi alla Giudia: Deep-fried "Jewish-style" artichokes that resemble golden sunflowers.

Abbacchio: Fried dielam, a staple of Roman feasts.
